On my list of mares, booked studs are showing up in the column, but when you go to the mare's page, that has been booked, it just says 'book this mare' where before it showed what stud the mare was booked to.

I just checked if I was seeing the same thing. I was but if you actually click "book this mare" then the booking you've made shows up
